Sunk into the windowless basement of the Hilton Atlanta by design — Hilton-branded Trader Vic's were purposefully built at the lowest level with few or no windows so guests felt transported the moment they walked in — the walls are still hung with taxidermied sea turtles, blowfish, and outrigger canoe oars, unchanged since it opened, making it the last of its kind after the chain shrank from 26 U.S. locations to two.

The move: Descend into the Hilton's basement for a Mai Tai flight and a pupu platter under carved wooden masks, and pretend for two hours that downtown Atlanta is Polynesia.
