Carboy Winery at Mt. Garfield Estate (Custom Blending Lab)

Set on an estate vineyard in Palisade wine country, Carboy runs a Custom Blending Lab where you don't just taste wine, you make your own. With a winemaker and sommelier walking you through it, you taste a curated lineup of reds and whites and then craft a bespoke blend of red, white, or rose to your own ratios. The roughly three-hour evening sends you home with six bottles of the wine you blended. It runs as a ticketed event on the winery's calendar rather than a daily offering.
