Entry No. 35 — the Boulder file — filed under: speakeasy

The Bitter Bar

The front of 835 Walnut still reads like it belongs to Happy Noodle House — curtains drawn, street door bolted, nothing to tip you off. Entry requires walking the alley and finding a door marked only by a glowing blue light and a retractable knob that appears when they're open. Inside, the craft cocktail program is dead serious: the opening bar team included a Gold Medal winner from the 42 Below Cocktail World Cup. It launched in 2011 as the nocturnal alter ego of the noodle shop, then swallowed it whole.

The move: Tell your date you're taking them to dinner, lead them down the alley, produce the knob, and watch their face before you explain what's actually behind the door.

📍 Before you go Enter from the alley behind 835 Walnut, not the Walnut Street front. Look for the glowing blue light; the door knob is retractable and only out when the bar is open. Street parking on Walnut or the nearby municipal garage on 11th.
