Denver's original farm-to-table restaurant, running quietly out of a brick Cap Hill rowhouse since 1997, years before anyone here used the phrase. The kitchen tears up the menu and writes a new one every four to five weeks around whatever Colorado farms are actually pulling out of the ground, so a dish you loved is genuinely gone by your next visit. The dining room is small, the open kitchen is right there, and there's a quiet courtyard for warm nights. Locals who care about food revere it; most visitors have never heard the name.
The move: Go on a warm evening, grab the courtyard, and order whatever's most seasonal off the rewritten menu since it won't exist in a month, treating it as a one-time-only meal you can't recreate.
📍 Before you go It's an easy address to walk right past — Potager hides in a brick rowhouse on a residential Capitol Hill block of Ogden, near the Whole Foods on the corner, so watch the numbers. A few parking spots sit directly behind the building; they go fast, so rideshare or arrive early, and don't poach the apartment lot beside the entrance, the Whole Foods garage, or Snarf's across the street. Indoor tables take reservations; the courtyard is walk-in only, so for a warm-night patio seat, show up early in the season. Walkable Cap Hill, with Cheesman Park nearby for a stroll after.
