Entry No. 28 — the Fort Collins file — filed under: speakeasy
Rosie's Barbershop & Cocktail Bar
What looks like a working barbershop on East 4th Street in downtown Loveland reveals a darkened speakeasy in the back — the entrance marked only by barber-supply signage and a super-secret chalkboard. Owner Taylor Groves rebranded his White Groves Barbershop & Taproom around 2018 and named the bar after his dog. The back room has an industrial-style glowing counter, streamlined seating, and a wall running Warner Bros. cartoons, Wu-Tang kung fu films, and classic horror movies on rotation. Head curator Troy Sinatra builds a rotating bimonthly cocktail menu; the signature Old Fashioned uses Four Roses Bourbon, house-smoked Demerara sugar, and a frozen rose water ice cube. Food trucks pull up regularly.
The move: Get a haircut during the day (weekday walk-in barbershop hours), then return on a Friday or Saturday night to show your date you know the secret entrance. Order the Old Fashioned and let the B-movie wall do the talking — no pretension, all atmosphere.
📍 Before you go Bar hours are limited: Friday and Saturday 5 pm–midnight, Sunday 3–8 pm (19 hours per week total). The barbershop runs Tuesday–Saturday 10 am–7 pm. No formal reservation system has been reported — arrive early on weekends. Watch for a food truck outside on bar nights. Parking is street-level in downtown Loveland. The entrance to the cocktail bar is through the back of the barbershop, marked discreetly.
