Entry No. 33 — the Houston file — filed under: speakeasy

Hidden Bar (at Norigami)

Beside the entrance to Norigami, a hand-roll sushi spot, there's a nondescript wood-paneled door with no sign. Pull it open and you're under dozens of neon-lit paper cranes suspended overhead, next to a neon diagram showing step-by-step how to fold one — order the signature Paper Crane cocktail and it actually arrives in a crane-shaped glass.

The move: Eat hand rolls at Norigami first, then slip through the unmarked wood-paneled door beside it for a nightcap under the paper-crane installation — the neon folding-diagram wall is worth lingering under for photos before your drink arrives.
