A dark, debonair cocktail den near the train tracks that turns into something stranger every Monday: chef Kevin Slemmons sets up a 10-seat sushi counter inside the bar and hand-slices a 14-course omakase inches from guests' faces under bright work lights, a scene the Santa Barbara Independent called intimate to the point of theatrical.

The move: Book one of the two Monday omakase seatings (5pm or 7:30pm, 10 seats only) and watch the knife work up close, then linger at the bar past midnight for craft cocktails.
