Hidden above the bar Tavern Law on Capitol Hill, this reservation-only den is entered by walking to the back of Tavern Law and picking up an antique rotary phone, which prompts a bartender to buzz open a vault door to a staircase. There is no printed cocktail menu upstairs; instead the bartender asks about your mood and flavors and builds drinks bespoke. The room is small and dim, trading flash for a genuinely private, off-the-record feel.

The move: Reserve ahead, lift the rotary phone to be let through the vault door, and let the bartender invent a custom cocktail based on each of your moods.
