Tucked into the lobby of the historic Hotel St. Francis, "Secreto" (Spanish for secret) runs a garden-to-glass cocktail program built around what's growing that week; the smoked sage margarita arrives still smoking under a cloche cracked open tableside. It's been called the most awarded cocktail bar in Santa Fe.

The move: Split a smoked-sage margarita on the seasonal patio at golden hour and watch the smoke curl off the glass while the plaza crowd drifts by outside.
